ø Ceylon Teas
Although the country’s name has changed, teas grown in Sri Lanka are still known as Ceylon teas. There are six main growing areas each with its own individual characteristics. Ceylon teas generally have a crisp, lemony flavour and are best drunk with a little milk.

Aislaby
Also located in the Uva region, this tea from the Aislaby Estate is of exceptional character. Mellow yet full flavoured, this is fine drinking.

ø Chinese Black Teas
In China there is no mention of black tea until the Ming Dynasty where it was produced in government plantations for Manchurian nomads. Even today black tea in China is produced almost entirely for the export market.

Golden Yunnan
Yunnan has been a tea producing province for more than 1700 years and the tea plant is thought to be a native of this area. Despite its long tea history, black tea production only began in Yunnan in 1939. The trees used to make Yunnan black teas produce soft buds and shoots and thick soft leaves with a distinctive peppery, earthy flavour.

Keemun
Keemun is one of China’s Ten Most Famous Tea’s, even though the Chinese rarely drink it. Keemun is a subvariety of the tea plant and is the only tea leaf which contains an essential oil called myrcenal. It is this that gives the tea its sweetness and distinctive taste. The tea grown in Anhui Province produces tight black leaves that gives a rich brown liquor, which has a lightly scented flavour and delicate aroma.

Lapsang Souchong
Smoked teas are a specialty of Fujian Province. The leaves are withered over pine fires and then pan fried and rolled. They are pressed into barrels and covered with cloths. After permenting they are fried and rolled and packed into bamboo baskets and dried over smoking pine fires.

ø Darjeeling
Unquestionably, India’s best known tea, the Darjeeling area is small, high and cold. Growth is slow and harvesting difficult and demand far outstrips supply every year. Each year the flavour of the crop is determined by altitude, soil quality, temperature, rainfall and surprisingly wind.

Darjeeling Autumnal
The distinct harvesting seasons in Darjeeling produce very different teas. Autumnals are gathered in October and November and give good quality dark brown leaves after processing. The infusion is copper coloured and much darker than earlier Darjeelings and as a result will take a little milk.

Darjeeling Margarets Hope 2nd Flush
One of Darjeeling’s most famous gardens, Margarets Hope produces consistently good Darjeeling teas. This classic 2nd Flush Darjeeling is wonderfully complex with an aromatic, reddish infusion.

Darjeeling Tiger Hill TGFOP 2nd Flush

Sikkim Temi
A stone’s throw from Darjeeling is Sikkim, an Indian State in the eastern Himalayas. This tea is grown in the valleys where the climate is tropical. Temi has a fine bouquet and a delicate flavour, reminiscent of Darjeeling but somehow less fussy.
